Mummy's noodle salad

Evie and Megan are always trying new things and what I love about their recipes is the room for adding whatever you prefer most.

Evie likes to add prawns to this dish, whereas Megan adds chicken because she has "decided not to eat cows".

What you need:

Cooked noodles (your favourite type)

Toasted cashew nuts

Sesame seeds (if you like them)

Raw veg such as carrots, red and yellow peppers, celery, sugar snap peas - all sliced lengthways into sticks

 

For the dressing:

2 tbsp olive oil

Juice of 1 or 2 limes

1tsp sesame oil

2tbsp soy sauce

1tsp grated ginger

1/2 clove grates garlic

Honey (optional)

 

1. Mix all the dressing ingredients together and add to the cooked noodles and toasted nuts.

2. Serve with any meat or tofu that you like best!

 

The girls both think this is good for their mums to take work, or even to put in their lunch boxes at school. Perfect for everyone!
