At the request of a lovely colleague, here is one of my favourite juices renamed for the lady herself, Jessica.
I have been home at my parents house this weekend and their next door neighbour has an apple orchard, so I went scrumping and got all the apples that I would need, and more!
There has been a lot of noise in the media recently about how juice is no longer good for you because it eliminates the fibre from the fruit or vegetable that you use. I often eat the pulp after I have made the juice, but having a lovely juice like this once in a while is delicious.
All you need is a juicer and the few ingredients below. If you only have a blender or smoothie maker, it would be possible to crush the ginger, but beware that the taste and texture will be very different and not as nice, in my opinion.
To make 2 large glasses (approximately 500ml)
Half a cucumber
Half a pineapple, outer skin and central core removed.
3 apples (gala are very good if you are buying them from the supermarket), cores removed.
a large thumb sized piece of ginger, less if you prefer a more delicate taste, skin removed.
Cut all the ingredients roughly into pieces that will fit through your juicer. You can leave the apple skin on, just remove the cores.
Make sure you remove the outer skin of the pineapple and the hard central part too. Give it a mix with a spoon after juicing, and pour into 2 glasses with some ice, for a lovely breakfast accompaniment.
